What is this, and how does it vary/ compare to cream cheese? (i.e. taste texture)
Raine,
I think its just large curds pressed to dry a little. It tastes similar to cottage cheese. When we used it came in 2 lb loaves like a rounded trapezoid. Definitely not creamy like cream cheese
The only thing it has in common with cream cheese is that it has a very mild flavor. I don't believe that it is aged more than a day or two. It has a dry crumbly texture, with a little bit of moisture still in the cheese.
Has anyone tried the cheesecake recipe that uses this? What was your opinoin of it? What else is it used in?
I've never tried cheesecake with this, but if I did, I'd probably mix it with another cheese, since it is so dry.. Farmer cheese is sometimes used to make noodle pudding (kugel).
The recipe has the farmers cheese pureed with sugar. No other cheeses. All other ingredients are like new york style
I was looking for different cheesecake recipes, and that one just struck me as odd. I'd never even heard of farmers cheese.
