What can i make with a over abundance of mint.

since i have no real freezer space it cant be anything like a sorbet and such

any ideas

Give it to your saute guy, it makes a killer mint sauce (with demi) for lamb. Try it, it'll surprise you. It uses so much mint you'll be looking for more!
