Turning to what? Honey is the only food item that does not go bad.

I had not realized crystallized (or granulated or creamed) honey was actually a sought-after form of honey. It always happens slowly but surely to honey I have left in the cupboard for too long.

I was curious so I did some research and found that many small beekeepers make and sell this type of honey. I just googled "crystallized honey" and got some useful info. But since I've never actually tried the stuff, I can't vouch for any sites offering sales of crystallized honey.

One site I did find is: www.honeylocator.com

It is a site where you can search for certain types of honey and find suppliers who sell them. Maybe that'd be a place to start.

If not, just leave some raw honey in your cupboard for a year or so and voila! Good luck.

Chefmanny - My honey crystallizes. Is that more slear than saying that it "turns"? Oh, well.
