Actually I noticed yesterday in Sweet Celebrations newest catalog they had started carrying fruit powders. I've never used them and couldn't think of what it would be good for but meringues are a interesting idea.

Do you have their toll free number. I think they use to be called Maid of Scandanavia. I no longer have their catalog.

This product is expensive (in my opinion), maybe albert uster is cheaper....you might want to check?

van Druren--a high quality product. It's
available from Jeff Bedinghaus of Skidmore Sales (800/468-7543) in Ohio (seedless 2.5 pound can $76.20) and Fresh and Wild (800/222-5578) in Washington state ($20.90 per pound with a 7 pound
minimum or pay $10 extra for under the minimum with no additional postage).

The product is quite tasty but very, very hygroscopic--it absorbs water like crazy. It has to be handled carefully and kept out of moisture. It really doesn't mix very well with pure chocolate, but it should work well in cookies.
