I had a customer ask me for a Traditional Apple Passover Cake. I have no clue what this is. Can anyone help me with a formula, and any instructions for handling of the food items. Do I have to be a kosher kitchen to make such?

Wait a sec, I just made one last week. I'll post the recipe tomorrow.
Oh well, I must've tossed the recipe, but I can tell you that it was from the April 2000 issue of Gourmet. It was pretty good, but needed more cinnamon.
