Hello to all in pastryland. This is my first visit to baker's dozen. I am learning to sculpt chocolate, and I am interested in any tips and hints to make this rather frustrating element of our art go a little smoother.

buy a good set of dental tooth cleaning tools .
they are great for this job and allow you to do some very fine carving in the tempered chocolate.
