I had a slice of wedding cake at an Italian wedding but wasn't sure if the cake was of Italian descent or if it was a cake eaten only in a wedding environment. The cake is a layer cake and is brushed with raspberry syrup & filling of a pudding/custard-like cream of vanilla (yellow) on one layer & chocolate on the second layer.

Does anyone out there know what the cake is called, what type of sponge cake it is & what is the filling that makes up the cake? I've looked through all my cookbooks & couldn't find anything fitting that description.

Sounds like it was an Italian rum cake with rasberry syrup possibily instead of the rum the cake is a very basic sponge and the filling is vanilla and chocolate pastry cream. If you need a receipe please feel free to contact me

This is a Zuppa Ingles (yes, literally English Soup). It is not only eaten at weddings, in fact I am impressed they made one that size since due to the cream it can be quite delicate. Traditionally it is vanilla cake with a layer of preserved fruit(such as apricot preserves)and pastry cream on one layer, a layer of fresh fruit (such as raspberries or cut strawberries) and pastry cream on the next layer, and a layer of chocolate pastry cream. This is just a giude line however, I have seen many variations and in the end it should be what you like! Good luck!

It could also be an Italian Cream Cake. We made it in a restaurant where I used to work, so if you think the cake had hazelnuts in it, post back and I'll dig up the recipe.

I have been looking for this recipe for about a year and just didnt know what it was either. It is a light sponge cake with cream filling and strawberries. It may have had a liquor. If anyone could forward this to me I would appreciate it. Thanks!!!

It has almonds I think but they may have been hazelnuts. I know there are many variations but I have not been able to find one close to the one I had. If you can help I would appreciate it.

I doubt that it is what they call Italian Cream Cake, as that particular item is hot here in Ky., although I am half Italian and lived in different parts of the country and never heard of it before. Why it is "Italian" and why it is "Cream" cake, no one knows, as there is no cream in any of the recipes found here, and has only cream cheese icing and as filling as well.
