I have my hands on some white pumpkins and am looking for some dessert recipes using them, preferably pumpkin pie. can anyone help me out???

Never made a pie with milk pumpkins, but I have done an awesome roasted pumpkin tart. Basically just cleaned and quartered the pumpkins, seasoned them with allspice and maple syrup. Roast until tender. Cool, peel, and slice. blind bake a shell with a pate sable, or use a raw sucre. Arange slices in shell and cover with a heavy custard mix (10 to 11 eggs per qt HC). Cook to set and serve with a brandied whip cream. One of my faves. Let me know if it works for you.
