I am doing a paper for a writing class about opening a small bakery. One of the things my professor wants in it is the outlook and success rates for new bakeries for as long as 5 years down the road. I have been looking for this information forever and cannot find it! Can anyone steer me in the right direction? If anyone knows please let me know!!! Thank you in advance. By the way, the report is due by Nov. 21 so I am under a time constraint here.

I don't know if that is being tracked or it's lumped with the food service stats.
A lot of small bakeries use the SBA for advice and funding. They might have the stats. Let me know if I can be of any further help, I own a few small bakeries.

I looked at the SBA but it didn't really have much in that particular area. I'll check the Nat'l Restaurant association.
