I have an order for a birthday cake on Tuesday and the customer is allergic to:dairy, eggs, nuts, chocolate and about a thousand other things. Any suggestions or recipes would be gratefully accepted.

I have recipes for a dairy, egg,nut free cake but its chocolate.
I will check deeper and let you know.
Can it be a single layer?
Does it need to be written on?
Where are you located,? can you get things like tofu etc.???

Laura, check back Tuesday. I might have one in a sugar-free cookbook,(using fruit sweeteners), but it is at the bakery, we're closed Mondays, and it is in the next town over. It also has non-dairy recipes. I'lll get back with you.

I could substitute carob for the chocolate. Otherwise the customers says that whatever I can come up with is fine. I am in New York, getting tofu and soymilk is not a problem.

Wendy's Plate Apple Crumb cake.
Topping:
1/4c Whole wheat pastry flour
1/4c White flour
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
1/8 teaspoon cardamom
pinch of salt
1 1/2 tablesppon canola oil
1 tablespoon maple syrup.
Mix all dry together and add oil then maple syrup. to form crumb. set aside.
Cake. (note mix just as you would mix muffins/Quickbread)
3/4 C whole wheat pastry flour
3/4 C white flour
2 1/4 teaspoons baking powder
1/4 teaspoon salt
1/4 Cup Vegetable oil (canola is fine)
1/2 cup maple syrup
1/2 cup apple juice
1/4 cup soymilk (reg or vanilla)
3 apples (granny smith)
8 or 9 inch spring form pan coat with veg spray.
preheat oven 350.
Sift all dry together.
combine all wet.
peel and slice 2 apple in thin slices and set aside.
peel and fine dice last apple.
mix all together, using whisk (stir dont whip)
stir in the fine diced apple into the batter.
pour into pan and arrange the sliced apples on top in a circle then sprinkle the crumb on the top..
bake 40 to 45 min or until done.
If you need other diet special cakes/pies or desserts.
