Wow Robert, lighten up. My goodness you are hard on a fellow chef. So what if Panini and ChefSpike post a lot? It's a way to vent. Lord knows we need a space to rant and rave. Only those of us who work in the field would understand what one another is talking about and if it's good therapy so be it. Forget what he says guys. It's his opinion. It's so easy to sit, read and pass judgment when one has no idea who or what they're talking about. Personal attacks are Oh So Unnecessary.
I mean look at it this way, thank God none of us work for the postal service...nuff said there!!
And TMarta...I got a new assistant last week. I wanted to go home and cry because our rice cooker died and this kid didn't know how to make rice without it!!! She told me it wasn't working and I said, "oh well, just make it on the stove" and she had no idea what I was talking about.
I'm like, get a pot, add some rice, water...blank looks all around. So I had to stop and show her what to do. It was almost like a demonstration ... Rice 101.

P.S. Tell your assistant to BAKE the rice. Rince, place with liquid in a covered casserole and bake it. She might be able to handle that. But you probably had to get a new rice maker, anyway!

TMarta...Thought about a new rice cooker, then wondered what I had her for. Too many modern conveniences. Great to save time but who learns anything anymore? Screw the rice cooker, make it the right way, the way my mom taught me way back when. How hard is it to rinse and measure? This means you actually have to pay attention to what you're doing. You actually have to make sure it's right. You actually have to learn something. What a concept! Another basic skill learned. Having a mother from New Orleans, rice is basic!
I'll get another one soon, frees up a burner on the stove. LOL.

Panini don't let the words of someone who appears to take pleasure in tormenting others run you away from a forum you enjoy. He's one person with one opinion (no matter how stupid it is) and it doesn't define you. It never will. You don't live, breath and work to please the Roberts of this world...if you did, you'd go nuts and never accomplish anything. So, you've had your say. Ignore him and move on. The only reason he does what he does is to get attention anyway. Look at it this way, he probably ruined the last 5 souffle's he tried to make and wants to take it out on you. Go figure.
