Just wanted to make a summer berry pudding with left over broiche and all the beautiful berries I have. I was just wondering if there was anyone with a receipe to share. I know there is a receipe in "Stars" but I don't have that book. Can anyone help? Gerard do you have any thing special up your sleave?

Hi Barrett,
I think I'd just whing it, maybe mix some creme caramel type custard, pour over the brioche and poach, chill and work with slices , cream and fruit.
clotted cream would be very good here.!

I'm always a day late and a dollar short.If I'm not mistaken..."Stars" was really basic like;Soften your fruit over low heat with sugar and a dash of lemon and layer in in you ramikin starting and ending with bread.Set some weight on it to mold nicely and serve with whipped cream. I wasen't thrilled with thier exact recipe if you don't have cream in every bite it was just fruity bread. "Stars" does have some other excellent recipes, I'm working my way though the book.

Thanks for the imput. The clotted cream would be yummy. As far as the fruity bread from "Stars" that is what I imagined it would taste like and that is not exactly the flavor I was looking for. But I will have to try the creme carmel method. With a compote of wonderful summer fruits. Before they are all gone... Thanks angin. Barrett

From my experience English Summer Berry Pudding is supposed to be like "fruity bread"! It was devised as a recipe to use up a glut of soft fruit in the Summer months in a simple way so that the separate flavour of the fruits can still be tasted, this is why bread was used instead of something more complicated. My Mum used to make it with day old white bread (not bog standard white slice though or it will go slimy and taste horrible, and everyone knows white sliced is only good toasted, with marmite!) I'm no professional but I do make a wonderful Summer Pud! No doubt all the proper chefs on this forum will rip me to shreds now so I better run away and hide now.

No, no, dear, they won't rip you up -- they'll just ignore you (except, at times, for Gerard, Charles, and Hans, who are wonderful human beings). Happily, I have a thick hide to go with all those food allergies ... and would love to try your recipe for Summer Pudding, if you'd care to post it here.
