I am a culinary student and was wondering if any of you can help me out. I am doing a assignment for my nutrition class and we need recipes for 5 desserts with low amounts of sugars, anyone out there have any ideas??

Make some crepes,
slice strawberries and sprinkle with grand marnier to soak.
Make some whipped cream with as little sugar as you can stand or use sweet and low.
Fold the crepes in 1/4's and arrange around the cream and strawberries. Or stuff and roll them with the cream. Why bother, desset is sweet time.!

You can make mousses with no added sugar. Melted chocolate (aprox. 6 oz), whipped cream (1 c.) and stiff egg whites (3).
I don't know doesn't choc. come under low sugar??? Truffles/ganache doesn't have to add sugar.
Crepes with any sauteed fruit...pears, apples, pineapple you can control the sugar. Cobblers too, you just have check whats needed for your topping.
Dried fruit chips, chow mein noodles mixed with choc. to make candy.
Some souffles take little sugar.

When we get a request for a low sugar or diabetic dessert, we do a cannoli - the shells have only a little sugar, and I make the filling with ricotta, Equal, lemon rind and just a few bits of bittersweet chocolate, serve it with some fresh fruit.
You might try a search for diabetic desserts on the net. I've found several that way.
