I'm interested in learning how to make wedding cakes, not only to expand my culinary knowdedge, but because it seems to be a profitable area to study (as far as baking goes). I was just wondering if anyone could suggest a few good books on the subject. I'm looking for something with a lot of good basic formulas on the various components of the cake - fillings, frostings, poured fontants, rolled fondants, royal icing, marzipan, the cake itself, etc. - as well as instruction on how to execute the formulas. Perhaps textbooks from a culinary institute? I realise that at least a few books might be nessessary to cover everything - formulas, technique, and of course decorating. I'm hoping to find books geared more towards the professional, but something that's not too brief in instruction. Any suggestions would be greatly appreciated.
