I am looking into owning a small retail bakery in a small city.The starting pay for employees is going to be small but I'm interested in perhaps paying a commission to the employees for high end cake sales(wedding cakes/quinceanaera cakes) to supplement their income. Does anyone have any experience to pass along regarding this; what percentage to pay and to whom? Thanks in advance for your advice!
