The best, cheapest, fastest thing you could do is get a coffee compound.
It's like a paste. Add that to a reg. ice cream recipe.
You don't have to change anything in the recipe to account for the coffee liquid.
You can add a lot or a little, depending on your taste, and color degree.

It really is good stuff, and not just for ice cream but for many, many recipes.
It even holds in Choc., like for choc ganache' and will not separate from anything else.
