Hi all,
I have a strange request. My local bank is under the delusion that because I am a chef, I must know everything about food. Yeah, right! Anyway, they are doing a Hawaiian theme for Halloween. Why? Because there is a competition amongst the local businesses for originality and creativity.
The thought of all those tellers in coconut bras.....
But I digress. Anyone have any recipes for candies, not necessarily pastries? I'm pretty sure they want to make them and not buy them. I've found some, but I would like a few more.

OK, OK, seriously, how about bon bons made with white chocolate, coconut, and macadamia nuts? Melt the chocolate, stir in nuts and coconut and drop into little pretensious paper cups to set in the fridge.
Or...if you're doing a buffet, maybe try chocolate fondue. Yeah, it's been done, but people LOVE to play with the dipping stuff (pineapple, bananas, mangoes, kiwis for a Hawaiian theme). AT least I would love it. Just a thick ganache in a bain marie.

Nah, I'm still here. I enjoy all the extraneous stuff, especially from our resident pastry dude turned actor. I do appreciate the ideas. I will be passing them on to the tellers on Thursday. Thanks again to all who helped and to all who just busted my chops!
To tell you all the truth, I'm much more concerned about those coconut bras than the damn candies!

i think we would like to see the photos from that party. cocnut bras, yummmm.
speaking of coconut, why don't you take any hard candy recipe and just add a little coconut milk to it.
or pineapple.
or papaya.
also, not to long ago there was a discussion about pralines.
i think you could alter that recipe to include chunks of fruit. then maybe rolled in coconut.
how about papaya fudge?, or mango, or kiwi?
throw some coconut in it to help as a binder
i'm just throwing stuff out there...
and don't forget to style the food, very, very important. LOL!

Do these have to be all candies/confection or this with mixed in cakes/cookies etc.
Going out to the stores here I haven't found anything that stands out as Hawaiian Candy other than the stacked to the ceiling islands of chocolate covered macadamia nuts or it's caramel "turtle" cousin.
I guess Hawaiian candy then would be a candy made of things we associate with Hawaii. Things that really come to mind are vanilla, coffee, mango, coconut, pineapple, banana.
We make a lot of candies at work here. I imagine these Bankers will be making items in their home kitchens. I guess they could use a coating chocolate if needed.
Couple ideas. If anything sounds interesting, let me send you the recipes.

Hi Spike and Pastrycrew,
I am going to talk with them today to give them the info I have so far and to talk with them about their comfort level making some of these items. Hell, maybe I can finaigle a catering gig out of this. One cool idea I came across was candy leis. I will bet the ranch that will be the one thing they go for. I'll let you know how things go.
