I am new to this web forum and I hope that will have some fun conversations. But to my question...
What kind of equipment are you using to grind the hazelnuts/almonds for nougat? I used to use something called "almond mill" which I cannot find here. Has anyone used a flour mill or such?

I have an old nut mill. I have heard that a flour mill will work (a chef in school used one) you just have to be careful not to take it down too far too fast or the oils will come out. But you knew that...
