hello everyone, I have just gotten a call from my cousin and was asked to make her wedding cake for February 2005. I am a Baking and Pastry major at Johnson & Wales University in RI. I have not made anyone's wedding before though. I was hoping that someone could give me some tips? I live in NJ and the wedding is in Florida, so I will have to make and decorate the cake down there. I was wondering what works the best for you? I have a website as well that I put all of my pastry lab work on, there are pictures of things that I have done so that you know what my capabilities are. make all your deco pieces( choc.,gumpaste,nougatine,sugar, ect.) at home(NJ) and pack them up to take with you. drive there.
bake and decorate the cake down there.

you could also just make a complete cake, just for practice.
practice makes perfect.
