Does anyone know of any sort of advanced or specialized bread baking classes or seminars being offered without having to travel to CIA I am already a capable baker working on my CJB certification but want to learn more rustic/european style breads possibly from a CMB.

It is not necessary to learn artisanal bread baking from a C.M.B. However, if you are interested in learning the science('formula balance' and chemistry) of bread baking, consider attending:

The Bread Bakers Guild of America is holding Camp Bread at the San Francisco Baking Institute during September 11-13, 2005, which quickly sold out, but there is a waiting list if an opening becomes available.
