2 cups bread flour
1 qt. buckwheat flour....No. 1

1/2 oz yeast
1&1/2 qts. water....No. 2

2 Tbsp. molasses
2 tsp. soda
1/2 cup HOT water
1 Tbsp. salt....No.3

1/2 cup melted butter....No.4

dissolve no.2 and add to no. 1.
beat til smooth.
cover and stand in fridge for 8-12 hours.
take out of fridge.
blend in no.3 and no.4 and allow to stand in room temp for 30 mins.
cook on lightly greased griddle.

Boston Brown bread.

2 cups milk
1/4 tsp. soda
1/4 tsp. salt
2 Tbsp. butter, melted
2/3 cups molasses.......No.1

1 cup fine, whole wheat flour
1&1/2 cups Holmuller dark, rye flour
1 cup corn meal.....No.2

1 cup raisins.....No.3

add no.2 to no.3 and mix until thoroughly incorporated.
add no.3 just before your done with the first step.
put into well greased or papered brown bread molds.
(3&7/8 top x 3&1/4 bottom x 5" sides)
scale 1&1/4 lbs.
cover mold and place in steamer, one forth filled with water.
cover steamer and bake in oven at 375 to 400 degrees, F. for 2&1/2 hours.
when done and still hot remove from molds and cool before cutting.
approx. 3 loaves

jefferson,... virginia...middle 1700 to early 1800.

hillbilly, but a smart one.

molasses, lard,(maybe butter) pecans, maybe cinn., sweet potatoes. (big ones).
maybe he had one of his slave cooks bake them.
and I bet they were loose, not hard baked but soft baked.
if ya want a recipe chef, you know with amounts, goggle ......monticello and buy the book.
geez, that was tuff. ya could have watched NBC and gotten the damn recipe.
and besides, this could have been his Mothers or wifes or daughters recipe.
or it could have been that slave cook that he had that was taught french cooking.
who knows?

O.K. there smart a$$...I was asking if the WFP resident baker Spike had a tried and true recipe, not a snide comment, for those I can talk to my waitstaff. As for the google part, again, wanted good input from Spike, a book only takes you so far, but a baker can tell you the tricks and secrets which I thought you had.......maybe you should stick to painting.

As far a Jefferson being a hillbilly....far from it. Read your history books, and NOT the ones the government recomends.

Lives in Cali and comes from Detroit?? Rope for a yankee?? I just wanted to add to a thread of spontanious recipes. Not to mention one that I have been searchin for. The bakery here used to do them and they were scone like but always too dry. I have been to Monticello (please capitalize it next time, it deserves that respect) and did not actually see a recipe for them.....although they could have been under a different name and it did not strike me as a possibility then. Also, why go to the internet or a book when I can go to the Man.....yes, that means you Spike. If you want, pass me Elwoods email and I will converse with him, think he might be a bit more respectful of a historical great rather than thy?? Just wanted to pick you brain dude.

I may be from Det-riot, but I've hung with enough guys from the south to become a member, so don't take that as I was making fun of them.
I'd rather be a hillbilly than a lot of other stuff.

O.K....let me explain....maybe it is all my fault.....I was truely lookin for Spike to give me the recipe....the only reason I asked was to prolong his spontaneous recipes thread. I only got defensive when I took it he was responding to me "snide" like, like I was one of those "i need help with my homework" threads....I do know how to google...but like I said.......books and recipes only go so far...the truth lies in the bakers hands, experience and technique and was askin for some of that professional insight from Baker Spike.

I would also like to email Elwood......cuz I have email Spike before and got nothin back.......well maybe that was when he was distracted by the Target fame!?!?!?
