Howdy i am a baker for a vegan/healthfood restaurant. we make our own almond milk and i was wondering if anyone had any ideas for using all the leftover nut meat.. after the milk is extracted???
I hate just tossing it

I'm new to this, how do you make the milk and what is the yield and cost. Do you think the meat can be dried and ground into flour?

almond is made by heating water and soaking the almonds in it for a few minutes then running the almonds with the water in a blender for a few seconds.
you than strain this with a muslin (or cotton ) bag. saveing the liquid and discarding whats left.

i dont know the cost the owners told me cost dosent matter because the product we make is far better than what can be bought. (so far)

ill have to try drying them maybe grinding it in a grinder and see what i get.
