I'm a housewife from the Philippines. I consider myself an accomplished cook and cake baker. However, I'd like to start baking bread, and I'd like to start and focus on cinnamon rolls (ala Cinnabon, whose taste I will never ever forget when I tried it in California). Could you suggest a good cookbook for me because I do not have the time to attend classes. Please also consider the very high humidity here in my country. Thank You!

Heres 9 recipes, I didn't look at them but I know you will have to reduce the amount of yeast to cope with the weather in the Phil's.
I stayed in Cebu in the visayas(?), its very hot.
Try using half the recommended amount of yeast.
I make them with brioche dough, but you shouldn't unless you have a cool work area because the dough requires quick hands and a cold table due to the butter content.
One thing we do is roll the dough 1/4 inch thick, brush with eggwash and sprinkle with cinnamon sugar, don't use straight cinnamon, its too strong. Grease your molds well.
We also chill the dough overnite to make it easier to work with.
