We are looking for a recipe for a truffle center
made from dark chocolate and peanut butter. The
intent of course is to dip the resulting center
in dark chocolate. Thanks!

You just add peanut butter to your ganache/truffle recipe. It doesn't take much peanut butter to get the flavor across. I add peanut butter all the time to my ganache when I have a torte combining those flavors.


Basic recipe would be:

1 c. heavy cream
2 tbsp. peanut butter
2 tbsp. sugar

Bring to a boil, pour over

12 oz. semisweet choc.


Then let it cool either in the cooler or you can whip it till it cools. Pipe it out as you would a truffle and dip. Although I'd probably dip it in white choc., maybe roll it in ground up rice crispies.

I have a great candy recipe involving choc & peanut butter, kids and adults love it. Basicly, it's peanut butter, xxx sugar, a little butter and rice crispy cereal dipped in semi-sweet.

I feed them to my snoot clients and they love that kind of touch. Actually, I think that reaction would only come from the "want to be rich" upper middle class that thinks something like rice crispys are not classy. Really rich people go for "Homemade" or "Mom made" simple, SIMPLE desserts that you can't buy at most pretentous restaurants.

My 2 cents...if it tastes great go for it, if you like it so will others.
