Has anyone ever made a chocolate cookie that has a coconut (Mounds candy bar like) filling. It was not a chocolate macaroon but a chocolate outside with a mound of coconut filling (not just coconut) on the inside. Very delicious.

We make Chocolate Tumbleweeds or Haystack. Coconut, chocolate chunks,pecans, sugar, eggwhites,. If this sounds like the cookie your looking for I can pull the recipe tonight.

I've made "candy" that's exactly like a mounds bar and chocolate/coconut cookies that are macaroons but if you mean a chocolate cookie with a baked in soft coconut filling...no. I can think of ways to acheive what your saying but I don't have a specific tried recipe...is that what you are looking for?
Like a chocolate thumbprint cookie....fill the center with either mounds like filling after baking or macaroon like filling half way thru the bake???

Definitely not haystacks. Not like thumbprint either. the coconut filling is inside and covered entirely with the chocolate dough. When you break it open you see the filling.

Well... I could give you a long list of books I'd look thru. Topping the list it sounds like something that could have been in Marsel Desalneir (sp?) book on cookies.
It doesn't seem like a cookie that you would find in a traditional book (at least nothing comes to mind). I also would look at Spagos' Chocolate cookbook (they had alot of cookies and candy), maybe Matta Heathers' (I can't spell names today)cookie book or even the re-released Flo Braker book on miniatures.
Where did you taste this cookie?

I have Flo Brakers book. I love it. Recipe not in there though. I'm making my first 4-5 recipes out of her book for a party next week. It's hard to choose which ones I want to try, they all sound and look wonderful.
