I need help on doughnut. I use a ready mix where you just add the water, it has been craking on the side since the last month. The supplier says that itīs not wrong with the mix. Do somebody know how to fix a problem like this. The oil what I use is fresh and the temperature 189-192C. Is it wrong on the flower or not.

Obviously Spike has never had a Krispy Kreme glazed donut straight off the conveyor belt. Melts in your mouth, grease be damned!

Scratch donuts beats mix any day, especially beignets, etc. So hope Carl eventually saw the light even if it didn't emanate from this site.

Krispy Kreme uses too much glaze. If only they would tone it down a bit... then they would be the best.

No, I have NEVER had a Krispy Kreme donut.
Nor do I want one.
And they are not like Beignets, and if you think they are then I feel that you have never had a proper one.
The hoorah, at least from my stand point is, it's just another typical American piece of crap food.
Much like the fast food that became so popular, ah... when?, during the late forties?
Maybe the very early fifties.
There's SO MUCH CRAP OUT THERE, for people to eat, that it has taken away from the eating, dining expierence that generations of good european chefs brought to this country.
But, leave it up to the Americans and we will find a way to reduce it even further down.
I don't know, maybe us chef's and those before us are to blame. But I THINK that the trend or maybe the stats will tell us that for the last 10, even 20 years, the number of rest's that have opened and stayed open have decreased in numbers in alarming rates. I don't mean chain rest's. But the one's that YOU all would love to work in.
Where the chef makes everything fresh. Where items are served on plates and not wrapped.
If you have kids, just look in your own cupboards and see for yourself. bars of this and that, snacks, indiv. wrapped STUFF made from who knows what.
When you advance these kinds of products, your just cutting your own throats. And the throats of chef's to come.
The idea is to get people to stop and enjoy eating again, buy less crap food, and not promote any of these products.
Donuts will never take the place of a good danish or croissant, or a brioche'.
Just like Burger King will never take the place of a burger made by one of you.
We are not just food makers but food salesman(salespeople)too!
How do you expect to make people believe that it's ok to have some grease bomb, and then come in to your rest and have a nice fresh meal.
And I have always found it funny that chef's that don't do deserts or pastry are the one's that think it's ok to eat that kind of crap, but the min Carls Jr. is brought up, everyone is cutting THAT product down.
and last, when you promote this kind of garbage all your doing is decreasing the value of Bakers and Pastry Chef's.
Think about that.

I read recently about the fast foods getting to our kids through the schools and making first come impressions on them. I am here to help the kids see another kind of food. Amazingly, they like my food, if not better, in most cases, as well as the fast food. We are down to only one fast food franchize (Pizza Factory) and the kid's comments are that it is greasy. They really prefer my pizza.

Recently my boss tried to get me to use a Spanish rice mix instead of making it from scratch for the Burrito Compuestas (for time efficiency). I explained my reasoning to her and for now we (us chefs you know) are still holding strong.

Kids will eat what is put in front of them and learn to like it, even prefer it. If they have a choice, some of them go toward the healthier stuff. I keep working toward it, only time will tell.

Spike, I totally agree w/ you. Just look at the health of kids today. When we were young, we ran outside everychance we got, and ate the good home cooked meals that 'mom' prepared, not some crap that comes in a box and all you do it reheat it, or add the spice package 1/2 way through cooking. It makes me sick to think of all the "crap" that is being marketed, and how so many people don't know how to cook, even for themselves. My g/f for example... she's one of those, "if it doesn't come in a box, I can't cook it". I told her that that's not cooking, that's reheating!

But, doughnuts are good. mmm mmm mmmmmmm

Kids are fat today because of a number of reasons. Like it was mentioned, today they spend the day watching TV or playing Nintendo or some other electronic game. In turn they don't get exercise and eat crap, this combination is lethal.
When we were kids we did play outside much more, so when we ate crap we burnt those calories.
Fast food is like the cigarette industry, they are getting in in middle and high schools to hook the kids when they are young then they have them eating their crap for life!
I think today's society and economics contributes to that by having both parents working in order to make ends meet. When the parents get home, they don't want to cook for two hours, they stop at McGarbage and pick up a fat burger!

Since the Krispy Kreme thing seemed to inspire your rant let me say I like Krispy Kreme. I also like a nice mesclun salad with caramelized onions, blue cheese, roasted walnuts and apples and other healthier foods. My wife and I have tried to teach our kids that there's more to food than McDonald's, like fresh veggies and fruit. They're just as likely to choose a Macintosh apple as they are a cookie when offered a snack. They're not always the best judges of what makes a good meal (ie: "No, chocolate cake is not for breakfast!"), but that's where my wife and I come in. We help them make better choices, with some room for junk once in a while. Everything in moderation.

I agree, kids today are more bombarded than ever with marketing geared toward them. If parents allow them to, they can easily eat more fat and carbs than a wrestler bulking up for the next highest weight class. Convenience may be one reason, but it's no excuse. I know from experience, believe me.

Bashing the fast food industry won't help. Teaching parents that it's ok to say NO when your kids want Pizza Hut 5 nights running might help. Yes, the burger joints will continue to target kids as long as there's a demand for crap. Dry up the demand and you dry up the supply.

It aint easy, but it's possible.

To be honest I have never had a Krispy Kreme either, I hear they are good though, nice & hot fresh out of the fat!!!!
I do like the Dunkin Donuts chocolate glazed though!!!!
The same is true with my kid (9 years old), he will ask me for salmon one day and the next is McD's w/ fries!!!!!!
He'll have a banana, an apple or a cookie. I at least expose him, not force him to try other foods, healthier foods. In the 80's when tasteless fat free everything came out it gave "fat free" or "low fat" a bad name to today!!!!! I think that's why people avoid that stuff like the plague now.

I was in no way saying or implying that anyone does not feed their children correctly.
don't think or get the impression that i was telling anyone how to feed their kids.
Nor do I care. I don't have kids, thank DOG.
all I was saying is that I don't like donuts.
and they fall into a catagory of crap, fast food.
I also said that, I, being a pastry chef hate the fact that someone would go get their kids donuts before they buy or make them a decent desert.
I also don't like the fact that some of you chefs would actually promote donuts. in some way shape or form or something or another.

yes!!!! some of my fondest memories are of watching and helping my Mom in the kitchen.
She was an excellent cook and baker.
one of the main reasons I started in the biz.
I know there's NO WAY to completely keep kids off of junk anything. Advertizing is just to powerful.
I feel sorry for parents that have to deal with that today. I don't, unless they use barking dogs,
then I just get that long dog stare.......

Ladycake, I grew up in rural(farm country) Illinois. About a 100 folks in my hometown. I've had possum(nasty greasy things), coon, bear, crow, beaver (of the dam building varity), and a few other critters that most folks might not wish to try. When I was stationed in Korea I sampled quite a bit of the culinary offering there as well. Dog isn't too bad and rat tastes kinda like squirrel.But I wouldn't want to eat them daily. On the flip side we also enjoyed things like wild morels and big fat juicy wild blackberries.

My people were from rural Missouri (pronounced Mis-er-a, thank you very much) two generations back and they are who I first learned to cook from. Good things come from those rural kettles!
