does anyone have ideas about fixing broken mousse that was made with whipped cream and eggs (meringue
or pate a bomb) plus gelatine ?
what i look for is a solution to this problem aftre the mousse is broken ,not tips on preventing it (...use underwhipped cream ,the right temperatures , etc.)

Azzuzizi,

If something could be broken I could break it but thats one thing I've never managed to do and don't know how you managed. If its chocolate mousse maybe you got the choc base clumped up.
Add very hot coffee.

If its creme anglais based maybe you curdled the creme base but I don't know what sort of mousse you made.

For broken creme anglais the fix is simple, whip a blob of butter into it. That re-emulsifies it.

I didn't respond Azuz because I've never even heard of someone breaking a mousse receipe. Unless your not incorporating your chocolate correctly as Jerard mentioned I can't see how you could screw up mousse. I can't even guess how you can break it??? Are you whipping your cream and eggs? Seperately???

I don't really mean to be sarcastic but I truely don't understand where your coming from.

i tell you where i am coming from.... marocco , thats where... i started this subject cause i red in the latest pastry arts and design magazin , a pastry chef talking about how he learned in school to fix broken mousse.. he did not go in to details on how he would do that...and i have no idea what he was talking about, so i thought i`ll` ask you guys.........
