I am starting to collect a great many sweet rolls in my freezer.

I am grinding them up for crumbs, am making bread pudding.

Does anyone else have ideas, for these leftovers?

There isn't alot of things you can do. Bread pudding is the best way to use them up. Maybe summer pudding or french toast?
You could lightly butter and toast them putting them over apples or pears in a crisp.
Mix it with raisins and nuts to stuff baked apples.
If you sliced them thin you could make a mock apple tartin over it.
Make a warm triffle with pastry cream, sauteed fruit, cin. roll, maybe apple sauce or carmel sauce.
Slice them and roll them thin, wrap around apple wedges and bake (you might have to toothpick them to hold while baking) serve with icecream, whipped cream or some sauce?
