We use simple ganache.dark-white-milk. We make them in loaf pans. pouring the white, than the milk, than the dark.It's a nice tri color look. We display them just as pate. With short dough,
ginger,tuile,almond wafers. ganache- 5lbs. to a 1 qt. cream, tweek it any way you like.
