I'm interested in recipes/source for a natural food store co-op bakery. I've worked at European type pastry/bake shops in the past and don't have a lot of experience with healthy baking. Probably low volume to start. Any help would be appreciated. Thanks.

There's a magazine called Healthy Eating, it's carried at all the book stores and most grocery stores in the U.S.. They publish alot of baking recipes and I think a collection of their "Best Of" for each year. I've never baked anything from them but they look good for health food.
I'd also look thru Weight Watchers magazine for recipes.

Not sure exactly. The store is changing locations and expanding and adding a deli and baked goods. Will be using products from the store (natural foods). It's all new to me. Picturesque town of 8,000. And will need one baker to take charge and do everything I think.

Any chance your near Chicago? We have a health food store called "Whole Foods" (or something close to that). It does ALOT of business!!! I think it would be good for you to see (maybe their a chain store I don't know). They have a beautiful produce section, meat, bakery and even frozen foods.
It's very nicely done and I'd guess making a killing.

I'm familiar with Whole Foods--there's one in Seattle. It is beautiful!.
