WebFoodPros.com: The Bakers Dozen: Buying Pastry Equipment in the U.S.

I needed a 20" cake pan but I couldn't find one in a hurry thru the catalogs I have. I wish I had more references for equipment. Would any of you share some of your sources, PLEASE?

I've often phoned sources I've seen listed in the back of books, but it's very rare that they come thru and mail the catalog I've requested. It's also hard to sort thru which ones are worth paying to get a copy of their catalog. Buying them can add up to alot of money when you discover they don't really have many pastry items.

If it's possible could you mention a telephone # or address with the name, also what you buy from them?

Help is greatly appreciated!!!

W.
I get our cake pans from a company named Coast Novelty out here in CA. They carry 20" cake pans(possibly up to 22" or 24", though I'm not sure), all kinds of cake-related tools and decorations. I'm not at work at the moment but will look up their phone number for you. They're located in Venice,CA.

You might take a look at American Metal craft Inc.
They offer a free catalog but you need to ask for the pastry and baking supplies one, they handle A PIZZA SUPPLY CATALOG AS THEIR OTHER ONE.

web address www.ammtlcrft.com/am
e-mail info@ammtlcrft.com
phone 1-800-333-9133
2074 George St, Melrose Park, IL.

I think they used to be Chicago Metalic.
Sorry this is the only cat. I could lay my hands on at home.

W., here's there phone number 1-800-877-2627. I looked up their web site at www.caketoppers.com, but was unable to get through. I forgot to mention, I also get sugarpaste flowers, pearl strands, columns, etc.(mostly wedding cake stuff) from them.

In a hurry I make sheets of genoise and cut half circles from each sheet. 2 qts of egg, 2 lbs of sugar and 2 lbs flour will give you enough for a 20 inch cake and then some.

I bought a wedding cake pan set yrs ago from the local bakery supply, don't you have anything local?

Cheers, Gerard

Gerard I'm sure there must be someone local but I don't know of them. I didn't want to piece it together if I could avoid it. Everyone at the club tried everyone they knew and the biggest anyone else had was 18" which I already had. I solved the problem by finding a 20" pot the guys use, the bottom isn't so flat but I can work with it.

Daniel I have bought pans retail made from Chicago Metalic. I tried to buy from them years ago and they shut me down. Maybe they've changed but I recall them telling me I'd have to be selling them retail in volume to buy dirrectly from them. Have you been able to buy dirrectly, not in volume?

Charles are you telling me about Chicago Metalic or a different company?

Ideally, I'd like to find a couple of places that carry speciality items. Equipment and edibles that would save me time or add that extra flare like what d. mentioned.

The catalogs I have are J.B. Prince, Sweet Celebrations, Wilton, King Arthur Flour, Penzeys Spices and Tomric Plastics. I have Albert Uster and buy chocolate from Mid-West Imports. That is my full list of sources and I feel like I'm missing alot!!!

Any other places would be a great help???

W, American Metalcraft is a seperate co. different from Chicago Metalic, my mistake. Am. Metal craft is a per item catalog. So I hope this was of some help, good luck. The new catalog is now all in one, pizza supplies are not seperate, so you just ask for res.and bar supplies.

Daniel I did look around there. I guess I'm a visual person because I not able to spend money on items I can't see. It is an interesting site but it leaves me in the same position of not knowing who's catalog is worth the money.

Pastry World: New York Resources for pastry chefs and foodservice professionals had some interesting sources if anyone else is interested.

d. I tried www.caketoppers.com it didn't lead anywhere would you resubmit them? I must have made a mistake. I'll call them but I was hoping to see there site first. Thanks!
