I know pastry chefs make far more difficult items than these!
Sure we make more difficult pastry but they sell for a lot more than cookies sell for.
I have a recipe you can try, this should do it.
2 1/4 lb flour
1 1/2 lb butter
13 oz sugar
6 yolks
6 oz almond paste
work alm paste and butter with the sugar til smooth, add the yolks then the flour, chill after tinting. Bake around 350.
This can be used to make checkerboard or pinwheel cookies also.
Assemble after baking ( I guess!).
