Beth--a much better source for all of your pastry needs is J.B. Prince--212.683.3553 or 800.473.0577--they have a beautiful showroom on 36 East 31st Street and an equally beautiful catalog. Bridge is clutterred and impersonal--and they don't have anywhere near the selection of quality pastry tools that Prince does. Prince listens to the best NYC pastry chefs that shop there--stocks products that meet their needs--and constantly searches for better products. Prince has a "chocolate" thermometer--for $39.--which basically looks like one of those long, thin glass thermometers that you used to use in chem labs in high school. I wouldn't recommend using this--it breaks VERY easily. Buy the cheapest digital thermometer that you can find--I bought one at Prince a while ago, but sometimes hardware stores have the same ones cheaper--but the brand doesn't really matter. Just make sure it's cheap--because you're going to lose it, or it will get stolen by a co-worker. Better to learn not to rely on the thermometer for chocolate work anyway--go by look and feel and fluidity. You'll be much happier and more empowered in the long run. If you are in the city and go by the showroom--ask for Rennis--she's extremely knowledgeable.
