It sounds like your oven temp. is too high, so you're burning the outside, but the inside is still raw, so it falls in the middle. Lower your temperature. Keep it in the water bath. It prevents the temperature from rising too high. If you still have a problem with burning, cover the pan as soon as the cake has developed the color you want.
