Well....I must say I really am not totally sure of good ones
on the how's and why's of baking. However, "Desserts to Die For"
by Marcel Desaulniers is amazing! One of my favorite cook books,
The Beginning of the book has a section called "Notes from the
Kitchen" that would be beneficial to the novice baker, w/ info
about butter, chocolates, baking powder and sodas...and a few
other misc. items. The reciepes are well written w/ great
description and discussion of the dessert...check it out! :)
