She's using dough enhancer, the primary reason to use it is you don't have to develop the dough.
It also accelerates the yeast, the downside is you have to stay ahead of it. 30 minute first rise instead of 90.
I have some, had it for a few years, its OK if time is an issue.
...although good bread late is better than mediocre bread early.
It depends on the the situation, delivery guys waiting to get going don't care how it was proofed.
It probably 'IS' better than she can buy but not better than I can make or you.
The question is, can she tell the difference.?
In certain situations it works great for sure.
If my apprentice quit I'd go back to using it in a heartbeat.
Shortcuts are like tools,.....theres a time and place.
