I don't know why I missed it. Probable because we never use it.
See's making "No Time Dough" basically. We made this stuff for
one week for a resturant chain. We had to make it according to
their specs. I first mixed it for 15 min, like I normally did.
But I noticed that it was developed with 5 or less. It was
allowed to rest for 10 min out of the mixer, shaped, allowed to
almost double (it had to go in young) this took 20-30n. So really
for that dough it took at the most 1-1/2 from mixer to finished
loaf. And boy it tasted like it. I was glad to see it go. A
little less yeast and a little more time and it may have tasted
OK.

You are right about that. I have a whole bunch that I can use if
needed.
