I don't care for gummy cookies so have never bothered with the recipes but a couple of things you can try will make them softer,
reduce you flour by 20% and use uns margarine instead of butter, remove them from the oven before they set and blast in front pf cooling fans to stop the bake process or the hot tray will continue to dry them out.
They should collapse when removed from the oven.
Have you tried any of these things?
