Absolutely there is. I bought a 10 ft grill with 6 rotating shelves that would allow me to prepare over 200 filets at one time or 160 ribeyes. It is on a trailor, so I can cook on site. The secret, if you call it that, is to recommend menus of veggies that hold well. Since my veggies are pre-cooked at my kitchen, all I need to finish are the grilled items.

The only reason caterers do the hot box thing is due to a lack of equipment. The product outcome suffers when you dont have enough equipment or staff members. If you dont have the money to buy the necessary equipment, then I suggest that you do not bid on the large jobs. You can only hurt your reputation by screwing it up. Let the people who have invested their money in the proper equipment have the big jobs.

I know I am setting myself up to chastisement for my statements, but I will put my food up against yours any day, anytime any where if you are cooking with sterno.

: I have been working for several large caterers over the past 2 years. I'd like to know if there is some way to prepare food for large sitdowns without stocking a hotbox full of sterno and firing up the entree. It makes me ill to see filet mignon cooked with sterno. Has anybody out there found a better way?
