I would serve the different things like mango chutney a special sauce in addition to glorified basics lik sesame seed mustard provide an opportunity for your guest to deviate from the norm but don't force them into it. The results will be unfavorable however if they do go for the basic yellow and white make it special. Add toasted sesame seed to a good mustard something not to extravagant. Jazz the basics, and provide an alternative.
for those that wish to be epicurious. I once served mediteranian delmonicos with kiwi mango sauce to a small party booked by a tourist agent, The tourist turned out to be Amish women... The meal was wonderful but they would have rather have had A-1 sauce on sirloin....
