Try this recipe... I've used it for sheet cakes with no problems.
2 1/2 cups of all purpose flour
2 cups granulated sugar
1 cup of cocoa powder
1 cup shortening
1 tsp salt
1 tsp baking soda
2 tsp baking powder
2 eggs (Room temp)
1 cup milk (room temp)(2% or whole works fine)
1 tsp vanilla extract
1 tsp almond extract (I've used emulsion too)
1 cup of coffee (HOT)

oven at 325.
prepare pan normally (grease and flour)
Mix all ingredients except coffee at low speed, scrape sides until blended.
Then take the cup of coffee (HOT) and add it slowly. mix about a minute. don't overbeat
Bake 45-50 minutes ...use the trusty cake tester to test for doneness.
