: Try this recipe... I've used it for sheet cakes with no problems.
: 2 1/2 cups of all purpose flour
: 2 cups granulated sugar
: 1 cup of cocoa powder
: 1 cup shortening
: 1 tsp salt
: 1 tsp baking soda
: 2 tsp baking powder
: 2 eggs (Room temp)
: 1 cup milk (room temp)(2% or whole works fine)
: 1 tsp vanilla extract
: 1 tsp almond extract (I've used emulsion too)
: 1 cup of coffee (HOT)

: oven at 325.
: prepare pan normally (grease and flour)
: Mix all ingredients except coffee at low speed, scrape sides until blended.
: Then take the cup of coffee (HOT) and add it slowly. mix about a minute. don't overbeat
: Bake 45-50 minutes ...use the trusty cake tester to test for doneness.

Sorry that I forgot to mention the yield of the recipe I posted... It makes 6 cups of batter. You can double and triple it easily to make any size you need.
