One thing that I would recommend is getting a "Food Handler Certificate" (thats what they call it here in NY). Its normally given after completion of a Sanitation Course.
Two reasons to get it are-
1) To make sure you are familiar with the ins and outs of sanitation
2) If there is ever a problem you can show that you cared enough to get the certificate.
