Most programs do, in their extern programs.

Possibly, but when a student is paying big bucks for the privledge, I think it's better for them to get a chance to work all the stations, under the direction of an experienced chef, with out the distractions that occur in the real world.

Unfortunately many (most) are totally cluelesss, and have no kitchen experience, let alone line experience. They need to be acclimated to the task and the climate, THEN throw em in the water and see who swims!
