Yes I agree w/ you 100 per cent! I think that the on campus
restaurants are fantastic. I just guess I would like to see
a scenerio similiar to the one I had when I went to school.
When I went to school, we spent our time in the kitchen and
classroom learning the fundamentals, then we had to put in 40
hours in an internship. There was a list of pre approved chefs,
that would take in the students, and work w/ them in a real
restaurant, put them in real situations.
It was so educational, an a real eye opener to the students.
Then we would all discuss our various internships and how they
were going each morning.........just a thought though.
