becoming a culinary instructor

I am hoping to acquire information and advice about
becoming a culinary instructor. I have a Bachelor's
Degree in English with a teaching certificate which
qualifies me to teach at the secondary level. Two years
after my graduation I realized my experience in various
restaurants along with a true passion for food could
lead to a career as a professional cook and, someday, a
chef. I attended Johnson and Wales University and graduated
in 1995. I now hope to return to school if necessary
in order to become certified to teach at a vocational
school or at the higher education level.

I am interested in hearing from other educators who made
the transition from chef to teacher.
