One suggestion for you : try the CD The Art of Making Great Pastries put out by Arome Interactive. In terms of objectives, it is most helpful to think in terms of what you want the students to be able to do by the end of the class, rather than focusing on what you want to teach. I like to begin my lessons when possible with a set induction ie. a hook to get the students interested. Good luck
