Pick up a copy of the Dec Good Housekeeping. They always have marvelous templates for gingerbread house. Other women's type magazines usually do, too. As far as how long they are edible, you can usually eat them anytime this season. When I have made gingerbread houses in the past, though, I have not eaten them, but packed them away carefully for use the next year. One year, I put it outside in January for the birdies to eat!
