: Without question use fresh. They will be tenderized enough in the baking process and the sharp tart flavor will shine through. If you have extra cranberries after the recipe is made try putting them in a food processor with honey, citrus zest & juice and a splash of cognac for an uncooked cranberry condiment with much bolder flavor than cooked cranberry sauce

Use fresh cranberries. Make sure you chop them up coarsly. and mix them into the dough. Cranberry bread is excellent for the holidays.
