Just don't freeze it, they say you can but it'll turn to mush when defrosted and
any dough made with it will be stunted.Wrapped in the fridge it should stay for at least a month.


I musta sold 20 cakes new yrs eve, mostly almond meringue filled with rasp mousse.
More than a couple asked where should I store the cake.
"in the sink" I said more than once.
